Squash - Sauteed with cheese

1 lb. Summer squash, sliced1 lb. Zucchini squash, sliced1 small onion, slivered2 cloves garlic, sliced1 medium bell pepper, cut in strips1 cup fresh tomato cut in wedges1/2 cup grated Parmesan cheese1 tbsp olive oil1/2 tsp basil flakes1/2 tsp oregano flakessalt and pepper to taste
Warm olive oil in saucepan over medium heat. Add garlic, onion and bell pepper, saute about 3 minutes or until onions are translucent.
Add squash and cook for about 5-8 minutes or until vegetables are crisp tender. Stir often.
Remove from heat. Add cheese, salt, pepper, basil, and oregano; stir. Add fresh tomato wedges and gently turn.
Makes 6 servings, approx. 1 cup.
