Black bean, Lime & Cilantro Salad

Ingredients
Dressing:1/4 cup olive oil (can be substituted with Udo's oil or Flax seed oil)Juice of 2 limes or 1/2 cup reconstituted lime juice1/4 cup chopped cilantro1 tsp. cuminsalt & freshly ground pepper, to tasteSalad:19 oz. can of black beans, rinsed & drained1 large red bell pepper, diced12 oz. can kernel corn, drained3 stalks of green onion (white & green parts), finely chopped1 jalapeno pepper, seeded and minced
Directions
Stir together the ingredients for the dressing in a medium sized bowl (preferably one with a lid for later storage in the fridge).
Add the salad ingredients and stir to combine with dressing. Adjust seasonings to taste. This salad can be enjoyed at room temperature or cold from the fridge.
