Pizza dough

Ingredients

2 Tablespoons yeast2 Tablespoons sugar2.5 cups warm water2 tsp salt3 Tablespoons oil (canola or olive oil)5-6 cups flouroptional- 1 TBLS basil or oregano
I just mix it all together and then knead (well- my machine kneads it) until it's 'dough' and cover and let rise for about 45 minutes or until double in size. Then I shape it into pizza crust.
Press or roll dough into 8 inch circles and then rub with olive oil. Sprinkle the top with salt and oregano. Cook in a 10 inch cast iron skillet on high for several minutes (until it bubbled) flipping until both sides are golden brown (not cooked through). Topped as desired and then put it in the oven (directly on the rack) at 500 degrees (not a typo) until the cheese is melted. Then you don't get a soggy crust.
If you only want to make one pizza make up all the crusts and then freeze them with waxed paper between them in a gallon ziploc bag. Then you can pull them out and top them for a quick meal. I've also topped them and then frozen them for homemade frozen pizza.

YES- I should have included this. I usually make it for my family of 6 and make up half the dough and freeze the other half. Generally I'll make it into crusts- par bake them and then freeze them. I added directions to the bottom of the recipe.
