P's Banana Flaxseed Pancakes

Combine Dry ingredients in a bowl.Salt, 0.25 tsp Baking Powder, 2 tsp Ground Flaxseed Meal, 2 TbspSugar In The Raw, 3 tsp Organic All-Purpose White Flour, 0.50 cup Whole Wheat Flour, 0.50 cup Mix wet ingredients in a separate bowl.Butter, salted, 2 tbspMilk, 3.25%, 1 cup Egg, fresh, 1 large Banana, fresh, 2 mediumCombine wet and dry with minimal stirring. Scoop 1/4 cup of batter onto a lightly buttered or sprayed griddle for each pancake.Flip pancake when bubbles that have formed start to burst, leaving tunnels. Second side cooks much faster than the first.
We cook on medium for about 6 minutes then flip and cook for another 2. Total cooking time depends on how many you can cook at once.

These are fantastic! The family loved them. I changed a few things and added a little. I used all whole wheat flour instead of the mix of white and ww. Also I used two packets of stevia instead of 3tsp of sugar in the raw. Then I added about a tsp of cinnamon and a drizzle of vanilla extract. - 6/20/12
