Roasted pumpkin with blue cheese, pasta & walnuts

Ingredients
700g pumpkin, peeled and cut into bite size chunks400g penne pasta2 Tbsp olive oilhalf a cup of walnut pieces, toasted100g blue cheese2 large handfuls of mixed salad leaves
Directions
Roast the pumpkin in the oil at 200C for about 20 mins until tender and browned.
Cook the pasta, drain thoroughly and add to warmed salad bowl.
Add cooked pumpkin and salad leave, toss so the salad begins to wilt. Sprinkle nuts and cheese on top.
Serves 6.
