Spinach Souffle

Ingredients
1/4 c. butter1 T. grated shallot or onion5 T. flour1 c. milk1 10-oz. pkg. frozen spinach, thoroghly drained1 c. shredded cheese (cheddar or mozz or jack)3 egg yolks3 egg whitessalt & pepper to taste
Directions
Grease your souffle dish.


Melt butter in small saucepan over medium heat. Add shallots and saute for 5 minutes, lowering heat if needed.


Whisk in 5 T. flour till evenly combined; pour in a little milk, whisk till evenly combined, then add remaining milk. Cook over medium heat, stirring constantly till mixture thickens and begins to pull away from the side of the pan. Remove from heat.


In a medium mixing bowl, combine spinach and cheese. Stir in milk mixture and season with salt and pepper to taste. Set aside while you prepare eggs.


Beat egg yolks till thickened and vibrant yellow. Set aside.


Beat egg whites till stiff peaks form (add a pinch of cream of tartar if needed).


Stir egg yolks into spinach mixture, then GENTLY fold egg whites into mixture. Pour souflle into prepared dish.


At this point, you either bake the souffle for 35 minutes in a preheated 400 degree oven, or you pop it in the freezer (make sure it sits leve!) for later.


If baking a frozen souffle, bake in a preheated 400 degree oven for 45 minutes.
