2 Tbsp olive oil1 large onion, chopped1 large green bell pepper, chopped3 cloves garlic, chopped3 baby zucchini, choped1 28 oz can tomatoes, diced2 cups pinto beans, cooked1 tbsp chili powder1/2 tbsp agave nectarsalt and pepper to taste
Heat olive oil in large dutch oven. Add onion, pepper, zucchini and garlic. Cook until tender. Puree or dice tomatoes with hand held blender or standard blender. Add to veggies. Next add pinto beans, chili powder, agave nectar, salt and pepper. Simmer until desired doneness. Makes 8 one cup servings
