Tabouli Salad

Ingredients
1/2 cup whole wheat couscous1 cup water1/2 bell pepper, chopped1 stalk celery, chopped1 green onion, chopped1/8 cup fresh mint, choppedJuice 1/2 lemon1/2 Tbsp extra virgin olive oil1 tsp balsamic vinegar1/4 tsp saltFresh pepper
Directions
Add 1 cup boiling water to couscous, cover and refrigerate for approximately 45 minutes.
Combine chopped vegetables, lemon juice, olive oil, vinegar, salt and pepper. Mix with couscous. Refrigerate for 1/2 or so.

    I love tabouli, and with the addition of balsamic vinegar, this sounds very flavorful. The only thing the recipe is missing is 1/2 cucumber, chopped, and 1 cup tomato, chopped. Excellent! - 8/1/10
