Ranch Chicken Salad

Ingredients
1/4 cup fat-free mayonaise1/4 cup low-fat sour cream 1/4 cup cilantro, chopped1 tsp grated lime zest (peel)1 lime, halved1/2 tsp ground cumin1/4 tsp ground red pepper4 portions cooked chicken breast (about 1 lb) cut into bite-size pieces1 can (15 oz) black beans, drained and rinsed1 can (11 oz) whole kernal corn, drained1 red bell pepper, diced1/2 red onion, chopped2 heads Bibb lettuce, seperated into leaves, washed (optional) (not figured into nutritional)
Directions
1. In a large mixing bowl, combine mayonnaise, sour cream, cilantro, lime zest, lime juice, cumin and ground red pepper. Stir in chicken, beans, corn, bell pepper & onion.

2. Divide lettuce evenly among four plates and top with a portion of chicken salad. Serve and enjoy.

I served with regular salad mix. Nutritional info is figured with regular mayo and sour cream (that's what I had).
