Canadian Bacon and Mushroom Omelet Cups

Ingredients
4 eggs1 c egg beaters1/4 c low fat milk1/2 c fresh mushrooms, diced2 slices canadian bacon, diced1/4 c cheddar cheese
Directions
Preheat oven to 350 deg. Place silicone muffin cups on cookie sheet. Sprinkle diced canadian bacon and mushrooms in bottom of muffin cups. Scramble eggs, milk, and egg beaters together. Salt and pepper to taste. Pour into cups. Sprinkle cheese on top. Bake ~25-30 min. Let cool. Freezes well.
