Ingredients
One onion, choppedAbout six large mushrooms, choppedThree small potatoes, choppedMinced garlic to preferenceTwo sausages (the ones I use are cheese sausages, 110 cal each), sliced1 1/2 cup egg substitute, or three eggs and four egg whites1 tbsp olive oil3 slices Kraft Singles
Directions
Start by heating oil in large skillet. Cook the potatoes until they are mostly done, then add the onions, mushrooms, garlic, and sausage. Cook until veggies and sausage are done, then pour beaten egg/egg whites over. Allow eggs to cook, then turn off heat and lay cheese slices on top to melt.

Serving is one quarter of the pan.
