Fantastic Summer Salad

1 bag raw baby spinach1 pint fresh strawberries, quartered2 cups fresh seedless grapes, halved1 can mandarin oranges, drained (I use the ones canned in juice instead of syrup)1 cup pecan halvestop with Raspberry Viniagrette dressing (I prefer Kraft Light)
mix, toss, and enjoy!

Add blueberries to this for extra punch and color. You can also create your own dressing by starting with a low cal poppy seed dressing, adding a couple of T of sugar free raspberry preserves and couple of T. of champagne Vinegar. I've also toasted pecans and sprinkled a few on top. - 7/18/09

I've had people say poppyseed goes well. I'm sure any fruity or sweet & tangy dressing would go good. I've seen a strawberry vinigrette that looked like it would be awesome

I made this salad for a 4th of July picnic, it was a hit. I added some dried cranberries to this recipe and it was just what it needed some color and a bit of surprise. Just one suggestion, which I will do next time is add the dressing at the last minute before you serve. Very Good will make again. - 7/5/09

LIVINGPRESENT
This was very good. I filled my plate with spinach (3 cups) and then topped it with 1/2 of the fruit mixture and a Tablespoon or dressing. For my friend I did the same to the amount of spinach she choose and added crumbled feta on top. Adds extra calories to her salad, but she liked it. - 6/27/09
