pineapple upside down cake

topping 2 tbsp butter2 tbsp brown sugar1/4 cup splenda granular1/2 tsp cinnamon6 pineapple ringscake1/4 c butter softened2/3 c splenda granular1 large egg1 tsp vanilla extract1 1/4 c all purpose flour1 1/2 tsp baking powder1/2 tsp baking soda1/3 c 1% milk1/3 c pineapple juice
1. preheat oven to 350. coat an 8- inch round cake pan with non-stick spray.
2. in oven melt butter in prepared 8-inch pan. after butter is melted , evenly sprinkle with brown sugar, splenda , and cinnamon . arrange pineapple slices in pan . set aside
3. in medium bowl with an electric mixer, cream butter and splenda. beat in egg and vanilla.
4. in small bowlsift together dry ingredients. in another small bowl combine milk and pineapple juice.
5. alternate mixing liquid and dry ingredients into creamed mixture.
6. pour batter over pineapple rings and bake 25- 30 minutes. turn cake out of pan cool on rack
