Chunky Pizza Soup

Ingredients
1 tbsp. vegetable oil 1 large onion, chopped½ cup mushrooms, chopped ¼ cup sweet green pepper, chopped28 oz. can plum tomatoes, undrained 1 tsp. dried basil1 cup beef stock 1 cup shredded mozzarella cheese1 cup thinly sliced pepperoni (about 5oz)
Directions
In a large pot, heat oil over medium heat.

Stir-fry onions mushrooms and green pepper until soft but not browned.

Add tomatoes, stock, pepperoni and basil.

Bring to a boil, then reduce heat and simmer for 10 minutes.

Ladle soup into 4 oven proof bowls, sprinkle with cheese

Broil until cheese melts and is bubbly or microwave on high for 1 ½ minutes or until cheese melts
