Chicken - Stuffed - Gluten Free

Ingredients
8 Slices of Turkey Bacon6 oz. of Cream Cheese, fat free, softened4 green onions, chopped1 teaspoon of garlic powder1 teaspoon of salt1/2 teaspoon of pepper2 chicken breasts, halved
Directions
Preheat oven to 350. Lightly grease a small baking dish.

Place the bacon in a large deep skilet. Cook over medium-high heat until the grease has mostly rendered, but the bacon is still very soft, about 3 minutes. Remove, pat dry with papertowls, set aside.

Pound chicken thin

Stir together the cream cheese, green onions, garlic powder, salt and pepper in a bowl until combined. Divide this mixture onto each chicken breast. Roll breast and wrap with bacon. Use toothpick to secure as needed. Place into prepared baking dish.

Bake in the preheated oven until chicken is no longer pink in the thickest part, 30-35 minutes. Remove toothpicks before serving.

    Great recipe. I used diced ham instead of bacon and put it inside also. I also eliminated the salt. - 9/13/14

    Love the combo of flavors with the turkey bacon. I put it in the stuffing instead and added some 2% provolone to top it off. Delicious and without bread! - 11/14/09
