Ingredients
1 c. flour1 c. quick oats1/2 c. sugar1/2 tsp. salt1/2 tsp. baking powder1/2 c. raisins1/2 tsp. baking soda1/2 tsp. cinnamon2 egg whites1/3 c. light corn syrup1 tsp. vanilla1/3c apple sauce
Directions
Preheat oven to 375 degrees. Spray cookie sheets with cooking spray. In large bowl combine dry ingredients. Stir in egg whites, corn syrup and vanilla until well mixed. Add raisins and apple sauce. Batter will be stiff.
Drop by rounded teaspoonfuls onto prepared cookie sheets. ( I find it easier to put the dought into a ziplock sandwich bag and squeeze it onto baking sheet) Bake 8-10 minutes or until firm. Do NOT overbake. Remove; cool on wire rack. Makes 50 small cookies. 1 cookie=1 serving.
