Southwest Tamale Cassarole

Ingredients
1 medium onion, chopped3 cloves garlic, minced1 tbsp olive oil1 lb ground turkey6 tsp Lawrey's Taco Seasoning1 can Bush black beans, undrained1 can sweet corn, drained1 can stewed tomatoes, undrained1 can black olives, pitted, drained1/4 cup cheddar cheese, shredded4 oz, mozzarella cheese, shredded
Directions
Saute' onion and garlic in the olive oil, about 3 minutes. Add ground turkey and brown, about 5 minutes. Add Taco Seasoning, black beans, corn, olives and stewed tomatoes. Cover and simmer for 15 minutes, stirring occasionally. Just before serving mix in the cheese.

Variation: do not add cheese to the mix. Pour mix into a baking dish or a cast iron pan. Top with corn bread mix. Bake on 325 until corn bread begins to turn golden on top. Spread cheese over top, and cook til browned. Corn bread will be moist on side touching filling.

Serves approximately 6 1-cup servings.
