Chicken Salad with a Spanish Flair!

Ingredients
.5 Cup Yellow Pepper, Chopped1 Medium Red tomato, Chopped3T Fresh Cilantro, chopped (can add more or less to taste)1T Hummus2T Salsa, (can adjust to taste)1 Sm. Chicken Breast, baked/or sauteed and chopped1/2C Mushroom Pieces, Cooked (lightly sauteed) OR 1/2 C Fresh if you prefer.
Directions
Early in the week I cook up several chicken breasts (from frozen, skinless/boneless).
I season them frozen, lay them on foil in a shallow pan. Bake them (loosely covered) at 375* for 40min. So I always have extras to use in dinners or the lunches I pack daily.
This is a lunch I make for myself, and eat as is. Sometimes altering the type or quantity of vegetables depending on what I have on hand. But I always have at least the tomato, and aim for another .5-1 C of chopped veggies.
All you have to do is chop and stir to combine.
The juices from the tomato, salsa, and the hummus combine to form a dressing. The hummus adds protein and a little fat; but gives a LOT of flavor and body.

    Glad you liked it! Were the veggie proportions ok?
    I like a lot...but maybe not everyone does. Those can be adjusted to suit.
    The hummus sounds weird but it tastes good and comes across as adding the garlicky creaminess you'd normally get from a dressing. Enjoy!
