Spicy Sweet and Sour Tofu

1 packet of Kikkoman Sweet & Sour Sauce Mix1/2 block extra firm tofu, drained and pressed for 1 hourExtra virgin olive oilVinegar - less than 1/4 cup3/4 cup water6 slices of cucumber6 slices carrot1 slice onion, cut into squares1/2 tomato coarsely chopped1/2 cup pineapple chunks Dried hot red jalapeno chiles to taste2 cups prepared brown rice
Dissolve the Kikkoman Sweet & Source sauce mix in 3/4 cup water and less than 1/4 cup vinegar. Set aside. Cut the tofu into 1/4" x 1" thick strips. Brown the tofu on low heat, coating the bottom of the fry pan generously with extra virgin olive oil. When the tofu is browned, add the sauce mixture, vegetables and chiles to taste. Scrape the tofu drippings from the bottom of the frying pan with a spatula and mix into the sauce. Bring to a boil, reduce heat and cover. Simmer on low heat for 10 minutes. Serve with brown rice. Makes 2 servings.
