Avocado Corn Relish

Ingredients
3 or 4 small Hass avocados (calories calculated using 3 avocados) 1 lemon1 can of yellow sweet cornRosemaryParsleya pinch of salt if desired
Directions
Cut each avocado in half and remove the pits. Take a knife and score the avocado 1 centimeter rows going vertically and horizontally (this does not have to be measured). Do not cut through the skin. Then take a spoon and scoop the avocado (basically cubed) and place into a bowl.
Add the corn. Squeeze the lemon (either half or whole, depending on your palate), over the avocado and corn. Add spices and mix.

Serve right away.

Serves at least 8 people as a side dish.
