Sugar-free Banana Power Cookies

3 ripe bananas 2 cups rolled oats 1 cup raisins1/3 cup sunflower oil 1 teaspoon vanilla extract
1. Preheat oven to 350 degrees.
2. In a big bowl, mash the bananas with a potato masher.
3. Stir in oats, raisins (or other dried fruit), oil (sunflower or any you prefer), and vanilla. You can also stir in nuts. I frequently do.
4. Mix well, and allow to sit for 15 minutes. Drop by spoonfuls onto an ungreased cookie sheet.
5. Bake for 20 minutes in the preheated oven, or until lightly brown.
Makes 24, 2 inch blobs.
