Classic Banana Muffins

Ingredients
2 cups flour 1/4 cup sugar 4 tsp baking powder 1/2 tsp salt 1 beaten egg 2/3 cup milk or soy 1 cup well mashed banana 2 tbsp vegetable oil
Directions
Preheat oven to 400 degrees.
Blend and Sift togeather;
2 cups flour
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
Make a well in the center of dry ingredients.
Combine and add:
1 beaten egg
2/3 cup milk or soy
1 cup well mashed banana
2 tbsp vegetable oil

Stir to combine and add to greased muffin tin. Fill cups 2/3 full.

Bake in preheated 400 degree oven for 20-25 minutes.

Yeild: 10 medium sized muffins.
