Vegetable Lasagna

Ingredients
1 yam1 onion1 eggplant3 c. spinach8 oz. ricotta1 package cream cheese (neufchatel)1 can tomatoes9 lasagna noodles4 oz. mozzarella cheese
Directions
Bake yam, onion, and eggplant until tender. Cook lasagna noodles. Mix ricotta and cream cheese in bowl, set aside. Mix spaghetti sauce and tomatoes in bowl, set aside. In glass pan, layer noodles, cheese mix, sauce mix, in that order until about 1/4 inch from top. Top with slices of mozzarella. Place entire pan on a larger baking sheet (to keep oven clean and to catch spills) and put in oven. Bake for 45 minutes on 350.
