Crispy Chicken Chunks

Ingredients
1 c fine bread crumbs (Progresso Plain)2 pkg Lawry's fajita seasoning mix (Other seasoning mixes could be used - chili, taco, etc)3 eggs, beaten2.5 lbs chicken breast, raw, skinless
Directions
serving size: 4 oz
Cut chicken breasts into bite size chunks. Dip into egg, roll in bread crumb mixture, place on foil lined cookie sheet. Bake at 350 for about 20 minutes - check for doneness by slicing largest chunk.
Good alone or in salads or with noodles - be creative!
