Spicy Vegetable Quiche

Ingredients
1 deep dish frozen pie crust1/2 c diced zucchini1/4 c diced red pepper1/2 minced jalapeno pepper1/2 c chopped onion2 c swiss cheese 4 eggs, beaten1/4 tsp black pepper 1/4 tsp salt 1 c 2% milk
Directions
Preheat oven to 375 degrees
Dice all vegetables and put in pie shell
Add cheese to cover
Blend eggs, milk, salt and pepper in a separate bowl
Set pie shell in oven and pour egg mixture over cheese
Bake 35-40 minutes until knife inserted comes out clean.
Cool 10-15 minutes before serving
Makes 8 servings

    I made this, but only used one cup of cheese and it came out great! I also added 4 pieces of chopped crispy bacon for some extra flavor. It only added 70 extra calories-so only about 9 calories/serving. I will definitely make this again so I will have breakfast on hand for the week. - 6/16/09
