Half Whole Spelt Bread

Ingredients
4 Cups (500 g) Whole Spelt Flour4 Cups (500 g) White Spelt Flour1 Tbsp (12 g) Active Dry Yeast2 Tbsp Sunflower Oil3 Tbsp (36 g) Cane Sugar3.5 Cups (840 ml) Water
Directions
Sift flower, add all other ingredients. Mix by hand or with the dough attachment on a hand mixer. The dough will be quite moist and gooey. Cover, set in a warm place, and let rise 1 hour.


Uncover, mix with a spoon to punch out all the air (it will be too sticky to punch down by hand) and pour into two loaf pans. Preheat oven to 350 F (180 C) for 15 minutes, all the while letting the dough rise a bit more in the pans.


Bake for 35-40 minutes, until tapping at the bottom of the loaf yields a hollow sound.


The serving size assumes that each loaf is cut into 20 slices. 1 slice = 1 serving = 42.5 grams.


Freezes very well, defrosts well in microwave.
