1 chicken tigh 2 tbsp Chavrie Goat Cheese1/4 cup of Mushroom (Shitake are nice)1 tbsp Shallot chopped1 oz Prosciutto (1 Slice)Olive Oil
Heat oven to 375F. In a small pan over medium high heat, drizzle olive oil to coat. Add shallots and cook until soft. Add mushrooms and cook for about 1 minute. Take off heat. In a bowl, mix the goat cheese with the shallot/mushrooms mixture. Put chicken tigh under parchemin/wax paper and using a mallet or roller pin, flatten to even thickness. Remove paper. Place the slice of prosciutto on a board. Put the chicken over the prosciutto. Spoon the cheese mixture on the chicken and carefully roll the meat over the cheese. Put in baking dish seam down. Cook until chicken reaches a temperature of 180 - about 20-30 minutes depending on oven. This is for a serving - multiply as needed.
