Sweet Potato Sorbet

Ingredients

3 medium sweet potatoes5 tbsp honey2 tbsp rum (vodka, scotch or cordial)1 tsp vanilla extract1/2 tsp cinnamon ground1/2 tsp ginger ground
Peel and cube sweet potatoes and boil until soft, about 20 minutes.
Blend sweet potatoes until smooth.
Press blended sweet potatoes through strainer to remove lumps or fiber strings.
Mix well strained sweet potatoes with rest of ingredients.
Spoon mixture into an 8x8 Pyrex pan, cover with plastic wrap and freeze for 4 hours.
After 4 hours remove from pan and blend mixture again.
Transfer mixture into a 3 cup Gladware container with lid. Freeze overnight.
Makes 6 1/2 cups servings.
