Lentil Casserole

1 Tbsp canola oil1 med. onion, chopped1 med. green pepper, chopped3 stalks celery, chopped4 cups water1 cup dried green/brown lentils11/2 cups cooked brown rice1 can tomato paste2 tsp. chili powder1/2 cup Pepper Jack cheese, grated
In large saucepan, saute green peppers, onion, & celery in oil for about 5 min.
Add water & lentils and bring to a boil. Cover, reduce heat & simmer for 40 minutes. Do not drain.
In a lightly oiled, medium sized casserole dish combine the remaining ingredients, except the cheese. Bake uncovered for 25 minutes at 350 F.
Sprinkle with cheese and bake until cheese is melted.
