chicken broccoli salad

Ingredients
1/3 cup cooked chicken breast1 cup raw broccoli, chopped4 baby carrots, julienned1/2 cup cucumber chunks1 tbsp red onion2 cups romaine lettuce, chopped1 tbsp golden raisins1/2 tbsp almonds, choppedDRESSING1 1/2 tbsp miracle whip/mayo, light dressing2 tbsp cider vinegar (balsamic works nicely too)1/2 tsp splenda1/2 tbsp flax mealpinch thyme
Directions
mix dressing ingredients together, add cooked chicken.

mix all prepared veggies in a bowl, lettuce going in last. top with chicken salad mixture and mix thoroughly. this will be thick and will take a few rounds to infuse all the veggies with the flavours. (i'm stingy with the mayo but it tastes awesome. if you want to add more mayo to your dressing, by 1/2 more tbsp, just add calories accordingly; it's not that much difference really. this does not have to be chilled first, as the lettuce will wilt if it sits.
