Chickpea Salad

1 (15 oz) can chickpeas, rinsed and drained1 cucumber, peeled & diced1 cup grape or cherry tomatoes, halved1/2 red bell pepper, diced1 tablespoon diced onion1 tablespoon olive oil1/4 teaspoon dried basil1/2 teaspoon dried parsley3 tablespoons balsamic vinegar1 tablespoon grated parmesan cheesesalt (to taste)
1. Combine chickpeas, cucumber, tomatoes, pepper and onion in a large bowl.
2. Whisk or shake the oil, spices, vinegar and cheese. Toss with chickpea and vegetable mixture.
3. Salad is best after about an hour in the refrigerator.
