1 tsp oil1/2 cup chopped onions16 ounces chicken breast, sut in bite size pieces1 1/2 tsp curry powder4 whole cloves2" piece cinnamon stick1/4 tsp salt2 cups chicken broth4 ounces uncooked rice1/4 cup raisins1 1/2 Tbsp toasted coconut
Makes 4 servings.
Saute onion in oil until soft. Add chicken and cook until browned on all sides.
Add spices, broth, and rice. Heat to boiling. Cover and simmer 10 minutes.
Remove from heat. Add raisins. Put in covered casserole dish. Bake at 350 for 30 minutes or until rice is tender. Just before serving, fluff rice with fork, remove cinnamon and cloves and sprinkle with coconut.
