Low Cal Split Pea Soup

Ingredients
3 Cups dried split peas rinsed and culled1 Large Onion finely chopped1 1/2 Cups chopped lean ham10 Baby Carrots diced.12 Cups waterSalt & Pepper to taste
Directions
Wash split peas and cull any that are poor quality. Add peas and 12 cups water to a large soup pot. Add the rest of the ingredients and bring to a boil. Turn heat down to medium low and let simmer for 3 hours, stirring occassionally. After peas are cooked, mash with potatoe masher/ricer. This makes a nice thick soup without adding flour to thicken.
