Citrus Chicken

Ingredients
1 whole fryer chicken-rinsed and pat dry1 small orange quareterd1 small onion quartered1 lemon quarteredlemon pepperblack pepperKosher salt
Directions
preheat oven to 425. Rub olive oil all over chicken and then rub black pepper and kosher salt in to skin and on the inside of cavity. Stuff cavity of bird with the oarnge, lemon and onion quarters. (you will not eat these when bird is doen-they are simply for flavoring-be sure to discard them)
Sprinkle lemon pepper seasoning over skin of bird. Roast in overn at 425 for 30 minutes. Turn heat down to 375 and raost another 40 minutes or until skin is golden broan and bird is cooked through. Allow to set for about ten minutes prior to carving to allows juices to redistribute throughout bird.
