Lamb & Potatoes

Ingredients
2 tbsp oil1 bay leaf1 tsp cumin seeds2 cloves1 cinnamon stick1 onion, sliced3 tsp ginger & garlic puree350g lamb, fat removed, cubed into bite size pieces200g potato, cut into wedges1 tsp turmeric1 tsp coriander1/4 tsp red chilli powder150g fresh tomatoes, chopped1 tsp salt2 tbsp coriander, chopped
Directions
Heat oil and add the bay leaf, cumin seeds, cloves, cinnamon stick and onions.Fry for 3 - 4 mins until spices fragrant and onions lightly golden.
Stir in ginger and garlic puree and fry for few more mins
Add the diced lamb to the pan and fry for 4 - 5 mins.
Stir in ground spices, chopped tomatoes and salt, then add enough water just to cover the meat.
Cook over low heat for 20 - 30 mins until lamb is just tender, add potatoes and cook for another 10 - 20 mins until potatoes are cooked.
Stir in chopped coriander just before serving
