3 medium potatoes, cut into chunks2 sweet potatoes, 5" long, cut into chunks2 medium zucchini, sliced1 medium yellow summer squash, sliced10-12 baby carrots1 bunch broccoli, broken into pieces1 small head cauliflower, broken into pieces1 cup red bell peppers, cut into strips1 cup green bell peppers, cut into strips1 cup fresh mushrooms, cut into halves4 cloves garlicExtra Virgin Olive Oil, 1 tbsp
Preheat oven to 350. Spray baking pan with olive oil. Add veggies and spray with olive oil, then stir together. Cover with foil and bake approx 60 minutes. Approximately 10 1-cup servings.
