Light Alfredo Sauce

1 Tablespoon butter2 cloves garlic -- crushed1 Tablespoon all purpose flour 1 1/3 cups skim milk 2 Tablespoons light cream cheese 1 cup grated parmesan cheese (freshly grated is best)2 teaspoons chopped fresh parsley -- optionalfresh ground pepper -- to taste
Melt butter in saucepan over med. heat.
Add garlic, saute 1 minute. Add flour and cook 1 minute.
Gradually add milk, stirring with wire whisk until blended. Cook 3-5 min. or until
thick and bubbly, stirring constantly.
Stir in cream cheese and pepper, cook 2 min.
Add Parmesan, stirring constantly until melted.
Makes 8 - 1/4 cup servings
