Pasta & Lentils

Ingredients
Goya Lentils, 1 cup Olive Oil, 1 tbsp Onions, raw, 1 medium (2-1/2" dia) Scallions, raw, 2 medium (4-1/8" long) Celery, raw, 1 stalk, medium (7-1/2" - 8" long) Garlic, 1 clove Chicken Broth or Bouillon, 1 cup (8 fl oz) Water, 4 cups
Directions
Clean and rinse beans. Heat oil and cook onion, scallion, celery and garlic. Add lentils, broth, water and spices (your preference here) and bring to a boil. Reduce to low heat and simmer covered until lentils are fully cooked (about 1 hour).

Cook pasta and serve lentils over 2 oz pasta. Sprinkle with 0.25 oz grated romano cheese and serve hot.

    I am not fond of beans or legumes, so I probably never would have tried it if my husband didn't make it. I liked it better when the lentils were pureed (it's a textual thing for me). I topped it with some grated cheese & a little shredded mozzarella. This made it tastly for me. - 3/26/07
