Light, Creamy Chicken Broccoli Alfredo

Ingredients
1 tsp Xanthan gum1 tsp chopped garlic2.5 C skim milk2 oz fat free cream cheese2 C frozen broccolidash of salt, nutmeg, black pepper and garlic salt, to taste (not included in nutritional information for sodium content).5 C Kraft 2% Italian Cheese Blend2 packages Tyson fajita chicken strips (6 oz each) ~or substitute any type of chicken strips. If using plain chicken strips, season with garlic, black pepper or seasoning salt prior to adding to sauce.
Directions
1. Mix all ingredients, except Xanthan gum, chicken strips and broccoli, in a medium sauce pan. Heat over medium heat, stirring.


2, When cheese has melted completely, add Xanthan gum and blend with an immersible hand mixer to make the sauce smooth.


3. Heat broccoli and chicken in microwave, then add to sauce. Stir to combine.


4. Serve over whole wheat pasta (not included in nutritional information.) Add a dash of parmesan cheese and/or pesto sauce for added flavor.
