Cranberry Almond Muffins

Ingredients
1/2 cp Spenda Granular1 1/2 cups whole wheat flour2 tsp baking powder1 tsp baking soda1/2 tsp ground cinnamon1/2 cp unsweetened orange juice1/4 cp fat-free sour cream1/4 cp unsweetened applesauce1/4 cp egg substitute1/4 cp sliced almonds1 cp dried sweetened cranberries
Directions
Preheat oven to 375 degrees. Spray a 12 cup muffin pan with butter-flavored cooking spray.
Mix Splenda, flour, baking powder, baking soda, and cinnamon together in a medium-sized mixing bowl.
Mix orange juice, sour cream, applesauce and egg substitute in a small mixing bowl. Add liquid mixture to dry mixture. Mix gently to combine. Add almonds and cranberries and stir until just blended.
Sppon batter into 12 muffin cups. Bake for 15-20 minutes or until toothpick inserted in the center comes out clean.
Makes 12 muffins.
