Ingredients
2 cups fat free cottage cheese1/2 cup salsa, or to taste1 10 oz. package grape tomatoes, chopped4 tbsp scallions (green onions), chopped3 cups frozen sweet yellow corn, thawed
Directions
Mix all of the ingredients together in a bowl. Serve with your choice of tortilla chips, crackers, or vegetables. Also great alone!

    I eat this all the time! Usually I'm lazy and just pour some salsa into a container of cottage cheese, but I tried it this way too and it's so delicious. My roommate thinks I'm nuts, but you guys have to try this. I eat it by itself, or put a huge dollop on top of a plain salad. - 9/23/09
