½ cup honey¼ cup brown sugar¼ cup Earth Balance or butter1 cup peanut butter (smooth or chunky)1 tsp vanilla4 Tbsps H2O1 cup brown rice flour1 cup quinoa flour1 tsp baking soda½ cup semi-sweet or dark chocolate chips
350 degrees, drop preferred cookie size (I used bite sized) on sprayed cookie sheet (used canola oil from Trader Joe's). Cool on parchment paper. Bite sized yields 60 cookies.

I am gluten free and my digestive system really likes quinoa but I do not particularly like the taste this was a great way to get it in my diet. I did sub the brown rice flour for gluten free pancake mix but it turned out great the kids even like them. - 5/31/09

That's great! I'm glad you and your family enjoyed the recipe. My nutrition professor added the recipe to her cookbook collection too. I like the idea of using the GF pancake mix, I often substitute items and they tend to turn out just fine too. Way to go you!
