Roasted Asparagus and Mushrooms

Ingredients
1 pound Asparagus, trimmed8 oz sliced mushrooms2 T EVOO1 clove garlicS&P
Directions
Heat oven to 425.

Toss the asparagus and mushrooms in a food storage bag with the EVOO and garlic until well coated. Spread out on a large baking dish. Sprinkle liberally with S&P

Bake for 15 - 20 min or until tender and lightly brown.

    I cook for 2 & did this: Toss cubed potaoes in EVOO & Good Seasons Italian dressing mix (about 1 Tsp) (xtra rosemary, too). Roast for 20 min at 425 in a large baking dish. After 20 minutes stir, move potatoes over to one side and put in 1/2 your recipe. Easy clean up, all sides in one pan. - 11/14/10
