Easy Beef Curry

2 red onions sliced2 garlic cloves crushed450g lean beef steak2 tbsps medium curry powder2x 400g cans chopped tomatoes4 tbsps mango chutney2 tsps vegetable stock powdersalt and pepper2 tbsps chopped fresh coriander to garnish
1. Heat a large non stick saucepan. Add red onions and dry-fry until brown.
2. Add the garlic and the beef steak, and continue cooking to seal the beef. Mix in the curry powder and cook for a further minute.
3. Stir in the tomatoes and then add the remaining ingredients except the coriander. Reduce the heat and simmer gently for 20 minutes, until the beef is tender.
4. Garnish with coriander before serving.
5. Serve with rice.
