Cucumber & Watermelon Salad

Ingredients
2 cups watermelon, cut into small cubes2 cups peeled cucumber, cut into small cubes1/2 cup fresh cilantro, chopped fine2 Tbsp lemon juice1/2 tsp chili powder1/2 tsp paprika1/4 tsp cayenne pepper1/4 tsp sea salt1/4 tsp ground black pepper
Directions
makes 2 2-cup 15 carb servings

1. Chop watermelon and cucumber into bite sized cubes and add to bowl
2. Finely chop 1/4-1/2 cup of fresh cilantro and add to bowl
3. Add lemon juice, chili powder, paprika, cayenne, salt & pepper and mix well.

Serve immediately.
