- red potatoes(approx 15)-halved or quartered depending on their size-olive oil-4tbsp depending on your personal preference-salt-2tsp-pepper-2tsp-garlic-2tsp (or season to your own taste)
Cut potatoes and mix with seasonings in baking pan of your choice (I use a casserole dish). Bake covered for 30 minutes at 375degrees. Then bake uncovered until potatoes are browned.

Made this today as a great side dish for baked fish. I used less oil and salt and it still tasted great. I had some leftover steamed green beans and stirred them in with the potatoes 10 min. before taking them out of the oven. My husband and I loved it with the green beans. Thanks! - 3/15/08
