Ham & cheese Breakfast muffins

Ingredients
2 cups (=8 eggs) Egg Beaters egg sub.3 ounces of ham (finely diced)(Or 4 soy sausage patties)1 cup onions chopped1 cup mushrooms chopped.5 cup shredded cheddar cheese 1 Tbsp olive oil
Directions
Saute the onions and mushrooms in the oil until they are soft. Let them cool about 2-3 minutes and mix all the ingredients into a large mixing bowl. Stir to combine and then, using a large spoon, fill muffin cups. Makes 12 muffins. If you use Veggie sausage patties, the calories content per muffin is increased to 64 calories per muffin.
In a muffin pan you will bake at 350 for 15-20 minutes, until the center is firm.

    I just made version of this using left over christmas ham. I make this every week for my on the go breakfast. I have a 1.5 hour commute and I reheat in the microwave for 45 seconds and eat two in the car. I use whatever is on hand for the filling. - 1/4/09

    Sorry about that. They bake for 15-20 minutes (or until firm in the center) at 350 degrees.
