Chicken Scallopini

2 - 5 oz. thin sliced chicken breasts (cutlets)Salt and pepper to tasteAll-purpose flour2 tablespoons butter, melted1/3 cup white grape juice1/2 cup 99% fatfree chicken broth
Place cutlets on waxed paper, and flatten to 1/8-inch thickness with a meat mallet or rolling pin.
Sprinkle with salt and pepper; dredge with flour.
Saute cutlets in butter on each side until browned. Add grape juice; cook 1 minute over medium heat. Remove to a warm serving platter. Add broth to skillet; bring to a boil, stirring occasionally. Pour over chicken.
Yield: 2 servings. Enjoy!
I like to serve with sweet potato fries and asparagus for a colorful and healthy meal.
