Basic Banana Muffin

Ingredients
2 cups flour1/4 cup sugar1/2 teaspoon salt3 teaspoons baking powder1 egg1 med to large banana mashed1 cup milk (1 %)1/4 c vegetable oil
Directions
Preheat oven to 400 degrees F
In medium bowl whisk together all dry ingredients.
In large bowl combine all wet ingredients thoroughly.
Gently add dry to wet ingredients and mix just until the dry has been incorporated.
Pour batter into greased muffin tins or into paper muffin cups, tap pan on counter to let air bubbles out.
Bake for 20-25 minutes or until toothpick inserted into center of muffin comes out clean.

Best consumed warm but can be stored in an airtight container for later consumption.

    I made it with skim milk and added 1/4 cup chopped pecans.
    It came out a little dry after 25 min, the additional fat in the milk would have helped. Good flavor and easy. - 10/14/12

    I added more sugar to this like more than 3/4 of a cup. The calorie went up. As well I added a bit more oil to this. Its being baked right now. - 1/19/10
