Lowfat crustless spinach quiche

Ingredients
egg beaters - 1.5 cupslow fat ricotta cheese - 10 oz.2% milk shredded cheddar - 1 cupDijon mustard - 1 Tbsponion - 1 small choppedfrozen spinach - 10 oz packagegarlic - 1 clove mincedblack pepper to taste
Directions
Combine egg beaters, cheeses, mustard and pepper.
Saute garlic, onion, and frozen spinach until moisture evaporates. Add to egg mixture. Blend well.
Pour into 10" pie plate.
Bake at 325* for about an hour until it sets.
Makes 6 generous servings.
